Step-by-Step Instructions
Step 1: Boil and Mash Potatoes
You will have to wash potatoes and pressure them for three to four whistles until they are soft.
After they have cooled down, remove the skin, and mash them using a masher or grater without lumps.
Step 2: Prepare The Mixture for Tikki
Combine the green chili, ginger paste, coriander, and all dry spices with the potato.
In addition, include salt, corn flour, and breadcrumbs.
Knead to obtain a dough-like mixture. Taste and adjust seasoning if needed.
Step 3: Optional Stuffing Peas
Pour 1 tsp of oil in a pan and warm it, add cumin seeds.
Put salt, turmeric, red chili, garam masala, amchur, and peeled peas.
Let cool after 3–4 minutes of cooking until moisture reduces.
Aloo Tikkis Shaping
To prepare plain tikkis:
- Roll a small portion of the potato mixture into a ball.
- Slightly flatten the ball to achieve a thick patty shape.
- If preparing stuffed tikkis:
- Flatten a ball of potato mixture with your palm.
- Spoon some filling then mash the edges to seal and flatten to patty shape.
- Tips: To ensure all tikkis to cook at the same time, ensure all of them are of the same size.
Step 4: Turn Tikkis Into Frying
Shallow Frying:
On a flat pan, heat oil to 2-3 tablespoons. Fry till golden brown on both sides on medium flame.
Adding the rest, flip gently with a spatula and cook fully.
Deep Frying For Extra Crispiness
Start by heating oil in a kadhai.
Carefully place tikkis into the hot oil and fry until they turn golden.
Let the oil drain off and then place them on paper towels.
Pro Tip: Avoid frying at high temperatures. While super hot temps may make the outside brown quickly, the inside can remain undercooked.
Serving Suggestions
Serve immediately after preparation with green, tamarind chutney, or even ketchup.
For some extra zing, sprinkle some chaat masala on top.
Construct Aloo Tikki Chaat by adding yogurt, various chutneys, chopped onions, sev, and pomegranate.

Tips For The Best Aloo Tikki
To get the best binding, use starchy potatoes like aloo and avoid new potatoes.
Avoid boiling potatoes too much as it turns them watery, making the dough sticky.
To get the aloo tikki shape, add cornflour or rice flour to make it crispy and not break.
Fry tikkis and leave them to rest for 10-15 minutes for better shape retention.
