ABOUT WHITE SAUCE PASTA

A traditional Italian pasta dish, white sauce pasta, also called bechamel pasta, is now a favorite in Indian homes as well! My family enjoys it for Sunday brunch as well as lunch and dinner. My children in particular can eat it hot, warm, or even cold, though I think it tastes best hot and fresh.

It’s a very straightforward recipe: pasta is boiled, vegetables are lightly sautéed, and a creamy, smooth white sauce made with cheese, milk, and butter is added. It’s a fantastic way to serve a dish that picky eaters will enjoy while sneaking in vegetables.

Ideal for a cozy dinner with garlic bread on the side, kids’ tiffin, or informal house parties. This pasta’s cheesy goodness, mild spices, and creamy texture make it a perennial favorite!

WHITE SAUCE PASTA RECIPE WITH STEP-BY-STEP PHOTOS

STEP 1: COOK THE PASTA

In a deep pan, boil 4-5 cups water with 1 tsp salt and 1 tsp oil
• Once the water starts boiling, add 1 cup penne pasta (or any pasta of your choice)
• Cook for about 7-8 minutes till the pasta is al dente (firm to bite—not mushy)
• Drain the pasta and retain some pasta water (about ½ cup)
• Rinse pasta with cold water to stop further cooking and keep it aside

STEP 2: SAUTÉ THE VEGGIES

• Melt 1 tsp of butter in a heated pan

• Put in 5-6 finely cut garlic cloves and cook for a couple of seconds

• Add ½ chopped onion and any preferred vegetables such as broccoli,Black Olives,sweet corn, bell peppers or carrots

• Cook on medium heat for 2-3 minutes

• Put in a little salt, black pepper, oregano and chili flakes

• Mix and cook for an additional 1 minute, then set the vegetables aside

STEP 3: PREPARE THE WHITE SAUCE

  • In a similar skillet, drop 1 tablespoon of butter and let it melt. Add 2 tablespoons of flour and mix continuously. With low heat, roast the flour till becomes light golden and nutty, but don’t let it burn.
  • Pour in 1 ½ cup of milk, to lessen the chances of lumps form, add in room temperature milk gradually while you whisk.

Continue whisking and cooking till the sauce further thickens. Now add,

2 cheese cubes or even more if extra chees is suits your palate. Also add ½ cup of reserved pasta water.

Season With:

Oregano, add also ½ tsp of chili flakes, ¼ tsp of pepper, ½ tsp garlic powder, and salt as per your preference.

  • Combine everything and simmer for 1-2minutes or longer until the sauce becomes silky and sumptuous.

 STEP 4: ASSEMBLE AND COOK THE PASTA

  • Add the previously sautéed vegetables and the cooked pasta.
  • Let simmer for two to three minutes for infusion of flavors.
  • Add a dash of milk or pasta water if the sauce is too thick.
  • Garnished with grated cheese or fresh herbs if desired.

  • Vegetable Options: You are welcome to select any of the following vegetables: broccoli, corn, carrot, bell pepper, spinach, and mushroom. Cut them into small pieces and sauté them lightly to preserve their crunch and vibrant color.
  • Flour Substitute: When making the white sauce, you can substitute whole wheat flour or oat flour for all-purpose flour (maida) for a healthier alternative. The finished product tastes fantastic despite a faint nuttiness!
